The ones that are WordPress-based would technically have an export functionality for all of the content and you should be able to get a copy of the database – all of which would you allow to set most if it back up in another WordPress installation. But there is definitely a lot of devil in the details – so, be sure to ask about this up front and make sure you feel confident you will be able to get your content out in a usable form.
